Bascom's Imported Large Pearl Tapioca


 

Directions

Gourmet Tapioca Pudding. 1/2 cup tapioca. 2 1/2 cups milk. 1/4 tsp. salt. 1/2 cup sugar. 2 eggs. 1/2 tsp. vanilla. Soak tapioca in 2 cups of water overnight in refrigerator in a 2-quart saucepan or double boiler. Drain water. Add milk, salt, sugar and beaten eggs. Mix well. Cook on medium heat until thickened (about 45-60 min), stirring constantly in order to avoid milk scorching. Pearls should be translucent. Remove from heat and add vanilla. Serve warm or chilled. Garnish with whipped cream and/or fruit. Serves 6. Note: for a fat-free and cholesterol-free preparation, substitute skim milk for milk and 3 egg whites in place of 2 eggs.
