For charcoal grills, kamado grills, smokers, & more. Use with Charcoal: Light charcoal as you normally would. Place dry wood chunks directly on ready charcoal about 5 minutes before you begin to cook. For slower smoking, put chunks along the edge of the fire and allow them to smolder. Use grill vents to control flare-ups. Use Instead of Charcoal: Build a barbeque fire with wood chunks the same way you would with charcoal. We recommend using a charcoal chimney. Fill the chimney with chunks, or a mix of charcoal and chunks, and light them with a solid fire starter or paper. Once the flames come out of the top and the chunks begin to char, carefully dump the chimney and spread the coals. Close the lid to put out any flames, and use the grill vents to control the temperature. Cooking over wood chunks will provide a strong, smoky flavor. All our wood is heat treated to a minimum interior temperature of 71 degrees C for at least 75 minutes. Heat treatment eliminates pests and prevents mold. Store in a cool, dry location.
