Preparation: 1. Bring 8 cups of water to a boil in medium size saucepan. 2. Whisk in potato soup mix and continue stirring until soup comes to a boil. 3. Reduce heat and simmer for 10-20 minutes. Stir occasionally. Variations: Use 4 cups water 4 cups milk for a cream style soup. Add up to 4 oz diced ham. Add 1/2 to 1 cup frozen corn. Stir in or top with shredded cheese and cooked, crumbled bacon. Add up to 1 pound cubed, fresh seafood during the last 10 minutes of cooking. Add broccoli, asparagus, spicy peppers or your favorite vegetable combination.
