Bring two quarts of salted water to a boil. Gradually pour in 2 cups Scalfani polenta stirring continuously for about 3 minutes. For thicker consistency, increase cooking time. Makes 5 servings. Family recipe: Cook the Scalfani polenta following above directions. Pour into baking pan and let harden. Top with Scalfani filetto di pomodoro sauce, sliced Sclafani gaeta olives and Sclafani parmesan cheese. Bake at 350 degrees F until warm throughout. Slice and serve. Sclafani polenta can be served either hot or cold.
