Victoria eggplant in vinegar is made from fresh eggplant which is peeled, cut in julienne style, cooked, and marinated in a tangy vinegar marinade. For a real Italian taste treat, drain liquid and rinse with fresh water, drizzle with Victoria extra virgin olive oil, season with Victoria oregano and Victoria Basil.
