Believed to be of Egyptian origin kept alive by peasant farmers in Egypt and the Middle East, Kamut Khorasan wheat has 20 to 40% more protein than durum wheat, with higher levels of lipids, amino acids and vitamins. OATS: A traditional staple of the Scottish, Irish, Russian and Polish peoples, they contain significant levels of protein and B vitamins. The oldest known cultivated grain, oats were found in a Bronze Age cave settlement in Switzerland. BARLEY: A cup of cooked, whole-grain barley contains as much protein as a cup of milk. This high protein profile and the ability to grow in poor soil and under cooler climates spread historic Barley cultivation across northern Europe, Tibet and China. MILLET: Millet was first cultivated in northern China, Tibet & India and historic records show it was spread by the Romans into Italy & France. Millet is an excellent source of niacin, thiamin and phyto-nutrients believed to lower cholesterol. SPELT: An early form of wheat with notable measures of iron and potassium, B vitamins, and high levels of amino acids and fiber, it is considered to be of prehistoric Iranian origin.
