How to Prepare: Oven (preferred method): Rinse & wrap Stokes Purple sweet potato in aluminum foil and place in oven preheated to 350 degrees F. Bake 1-2 hours (until soft). Cool, unwrap & enjoy. Refrigerate overnight for denser texture. Microwave: Rinse and wrap Stokes Purple sweet potato on wet paper towel. Place in microwave-safe dish and cook in 1 inch of water for 6-8 minutes or until soft. Note that for low wattage microwaves and cooking multiple potatoes, time may vary. Cool, unwrap & enjoy. Perfect for: Soups; salads; hummus; fries; desserts. Store in a cool, dry place, for up to 2 weeks.
