During packaging oxygen is pulled out of the package and your meat is sealed air tight to preserve the quality and extend the shelf life. It's oxygen that gives meat its reddish color, so don't be alarmed if your meat looks brownish in color, this is normal. When the vacuum seal is broken and the meat is exposed to oxygen, oxidation will begin to occur and the meat will begin to very slowly "bloom" or return to its reddish color.
