Buffalo dressing and pasta kit instructions: 1/4.06 lb. Each case contains enough ingredients to make one kit. Each kit contains: One 37 oz tub of rotini pasta. One 20 oz bag of buffalo-style dressing. One 4 oz pack of bacon topping. One 4 oz pack of crumbled bleu cheese. Shelf life: Preparation day + 1 day. Keep refrigerated. Buffalo chicken pasta salad: All divisions. Shelf life after opened: 2 days. 1 kit per case. Each kit requires 1 lb of chicken tenders. Chicken tender cooling: 1. Remove chicken tenders from the warmer at the end of their hot hold shelf life, immediately verify the temperature of tenders with a calibrated probe thermometer. Verify that the temperature is at or above 140 degrees F. Distress tenders that are below 140 degrees F/60 degrees C. 2. Wash hands for a minimum of 20 seconds with soap and warm water. Put on slicing glove with single-use glove over it. 3. Weigh out 1 lb of cold chicken tenders and slice into 1/2" x 1/2" pieces. 4. Place cut tenders in a cleaned and sanitized container to chill to 40 degrees F or below either uncovered or loosely covered with parchment paper in the walk-in cooler. Use the established chilling procedure and complete the chilling log. Distress tenders that cannot complete chilling procedure within the time specified. 5. Date-mark the container or tray of the cooling tenders with a 2 day shelf-life (today's date +1). Assembly instructions: 1. Wash hands for a minimum of 20 seconds with soap and warm water. Put on single-use sanitary glove. 2. Weigh out 1 lb of cold chicken tenders. 3. In clean and sanitized mixing bowl, combine pasta & sauce. Mix to thoroughly coat pasta. 4. Add chicken tenders, bacon & blue cheese, reserving some bacon and blue cheese for garnish. 5. Place mixed salad in a clean display tray and garnish with remaining bacon & blue cheese. 6. Place the product in the refrigerated full service display case. 7. Distress product accordingly at the end of its shelf life.
