Do not eat raw dough or batter. Measuring and storing flour: spoon flour into a measuring cup and level off with knife. No sifting necessary. Store flour in an airtight canister in a cool, dry place. For longer storage, place in a resealable plastic freezer bag and refrigerate or freeze. Bring to room temperature before using. Substituting flour: whole wheat flour can be incorporated into all-purpose flour recipes. We suggest starting at 25% and then working your up to 50% of the total flour required the recipe as you become more comfortable.
