C'est Bon!™ French donut mix: 10 lb - Base. Water 8 lb 12 oz. 40 lb - Base. Water (variable) - 75 lb. Stage 1: *Add all water slowly on low speed over a 2 minute period. Stage 2: Mix 4 - 5 minutes in medium speed. *Bowl, beater, and equipment used should be clean and free of all batter and flour prior to use. 90 degrees F batter temperature. 385 degrees - 390 degrees F fry temperature. No floor time is necessary, and it is suggested not to make more batter than can be run in 30 minutes. Frying submerged: Fry donuts 2 minutes; turn and fry 1/2 minute. Submerge and fry for 1 1/2 minutes. Frying without submerging (preferred method): Fry donate 2 3/4 minutes; turn and fry for 2 1/4 minutes. Turn and remove. Ice lightly while hot. These instructions are intended as a guide and may require changes to fit individual shop conditions. Store in a cool, dry place.
