Directions

What you'll need: (For pickles featured on front). 2 1/2 pounds cucumbers, washed and blossoms removed 3 cups onion, thinly sliced. 2 cups sugar. 4 cups white or cider vinegar. 1 cup water. 6 one-pint jars. (Sterilized according to manufacturer's instructions). Directions under flap: First: slice cucumbers into quarter-inch slices. Divide cucumbers and onions among jars, alternating to form layers. Next: in a large saucepan, combine sugar, vinegar, water, and seasonings and bring to a boil. Stir until sugar is dissolved. Ladle hot liquid into jars, leaving 1/2 inch headspace at the top, remove any air bubbles, and secure lids. Last: quick pickles: allow pickles to cool, refrigerate, and enjoy for up to 10 days. Shelf stable pickles: For up to one year shelf life, process jars in boiling water for 15 minutes* making sure to adjust for higher altitudes. Jars should be tightly sealed according to manufacturer's directions. For best flavor allow pickles to sit for 24 hours, chill, and enjoy! For Crispier Pickles: Soak cucumber in ice water for 4 hours and drain before pickling. *Increase processing time 5 minutes for 1,001 - 3,000 ft., 10 minutes for 3001 - 6000 ft. and 15 minutes for 6, 001 - 8, 000 ft., and 20 minutes for 8, 001 - 10, 000 ft.
