Cooking Techniques: Cook and Serve: Cut polenta into 1/4 to 1/2 inch slices. Stovetop: For best results, use a preheated nonstick pan and cook 5-6 minutes on each side. Polenta can also be pan-fried in a small amount of olive oil. Oven: Bake at 350 degrees F for 10-15 minutes. BBQ: Grill an oiled BBQ rack for 5-6 minutes on each side. Note: Polenta should be slightly brown and crispy on each side and warm and soft in the middle. Creamy Polenta: Brand 1 pound polenta with 1 cup of water a milk in a food blend until creamy, approximately 2 minutes. To heat, microwave on high for 2-3 minutes or in a saucepan on the stovetop for 2-3 minutes. Refrigerate remaining portion in a sealed container. Serving Suggestions: Use polenta as a base for mini pizzas. For antipasto, cube grilled or baked polenta, add chopped tomatoes, garlic, basil and olive oil. Toppings: Top with Parmesan, mascarpone or ricotta cheese, tomato or pesto sauce, sautéed or grilled onions, mushrooms, vegetables, sour cream or butter. Entrees: Great in lasagna, ratatouille, tamales, stews. Refrigerate after opening. Do not freeze.
