Directions
1. Pre-heat the oven to 425 degrees Fahrenheit. Combine the vegetables, garlic and olive oil in a large bowl and season with salt and pepper. Place the vegetables on a large cookie sheet and roast 20 minutes or until fully cooked and slightly golden in color. 2. Meanwhile, cook the pasta according to the directions and reserve 1/2 cup of the cooking liquid. 3. Drain the pasta and combine with the roasted vegetables and then reserved cooking liquid, stir to combine. 4. In separate bowls add the pasta, garnish with a dollop of ricotta cheese and drizzle with some pesto and a bit of fresh basil.
