Directions

Muffin directions: What you need: Baking mix (included). 1 single-serve container (5.3 ounces) or 2/3 cup plain or vanilla flavored Greek yogurt*. 2 large eggs. 1/2 cup oil such as Mazola® corn oil. Preheat oven to 375 degrees F. Line 12 standard-size muffin cups with paper liners or spray with cooking spray; set aside. Combine all ingredients in a large mixing bowl with a spoon. Stir until mixture forms a batter, about 50 to 60 strokes (or, mix 30 seconds at medium speed with an electric mixer, scrape down sides, then mix for an additional 30 seconds). Spoon batter evenly between prepared muffin cups, filling each about two-thirds full. Bake for 15 to 20 minutes or until wooden pick inserted in center comes out clean. Cool on wire rack for 5 minutes. Remove from muffin pan and serve. Enjoy! Preheat oven to 350 degrees F. Spray an 8 1/2 x 4 1/2 inch loaf pan with cooking spray and set aside. Combine all ingredients in a large mixing bowl with a spoon. Stir until mixture forms a batter, about 50 to 60 strokes (or, mix 30 seconds at medium speed with an electric mixer, scrape down sides, then mix for an additional 30 seconds). Pour batter into prepared pan. Bake for 45 to 50 minutes or until wooden pick inserted in center comes out clean. Cool in pan for 10 minutes. Remove from pan. Let loaf cool completely on wire rack, about 1 hour. Slice and serve. Enjoy! *regular yogurt can be substituted, but will lower the as prepared protein amount to 3 grams. For a simple flavor twist, try adding any of these ingredients. 1/2 cup fresh or frozen peaches. 1/3 cup sliced almonds. 1/2 cup chocolate chips.
