Grilling Tips: Grilling (for general grilling): Open grill vents for higher temperatures. Reduce vent openings to lower the temperature. Cooking with the lid off creates high heat. Cook with the lid on for slower cooking methods. Smoking & Slow Cooking (slow cooking is a process of barbecuing for long periods of time at low temperatures to add flavor and tenderize): Fill up the bowl with charcoal and light briquets with fire-starter cubes or an electric starter. Reduce the vents to lower temperature, maintain moisture; cook over a drip pan with water on the empty side. Directions (1) Stack Briquets: in a pyramid. Add lighter fluid following lighter fluid directions. (2) Light charcoal. Leave grill uncovered. Flames will die out while the briquets continue to burn and start to ash over. Spread Briquets in a single layer when covered in ash (in about 15 minutes). Begin grilling. or 3B Move briquets to one side of the grill when covered in ash (about 15 minutes) to create 2 cooking zones. Begin grilling. Store briquets in a cool, dry place.
