All you need: 1 tbsp. oil. 1 large yellow onion, sliced. 1 medium red or green bell pepper, sliced. 1 lb. ground beef. 1/4 cup water. 1 medium tomato, cut into wedges. 8 fajita-size flour tortillas, warmed. Makes 8 fajitas: 1. In 12-inch skillet, heat oil over medium-high and cook onion and green pepper, stirring occasionally, until tender; remove and set aside. 2. In same skillet, brown beef; drain, if desired. 3. Stir in spices & seasonings and water. Bring to a boil, stirring occasionally. Reduce heat to low and simmer, stirring occasionally, 3 minutes. 4. Return vegetables to skillet and heat through. Serve in tortillas and, if desired, with salsa, guacamole and sour cream. Chicken or steak fajitas. Prepare as directed above substituting 1 pound thinly sliced chicken or steak for ground beef in step 2 and cook, over high heat, 3 minutes, stirring occasionally.
