Directions

1. Pre-heat the oven to 425 degrees Fahrenheit. Toss vegetables with olive oil and sage, then season with salt and pepper. Place the vegetables on a cookie sheet or jellyroll pan and roast in the oven until slightly golden in color and fully cooked, approximately 25 minutes. 2. Meanwhile, cook the pasta according to the directions, reserving 1 cup of the cooking liquid. 3. Whisk the goat cheese and reserved pasta cooking water until well blended. Fold in the roasted vegetables. 4. Garnish each serving with cheese and almonds.
