Prep time: 15 minutes/cook time 20 minutes/ready in 35 minutes. Prep: 1. Preheat oven to 375 degrees F. 2. Thoroughly wash whole produce. 3. Sweet potatoes - peel and cut in half lengthwise. Cut each half into 4 wedges and half again. 4. Brussels sprouts - cut ends off Brussels sprouts and cut in half. Cooking instructions: Vegetables: 1. Place sweet potato on one sheet tray and mix with 1 1/2 tablespoon of olive oil. Season with salt and pepper. Roast in oven for 20 minutes or until golden browned and tender. 2. Toss Brussels sprouts and red onion with 1 tablespoon of olive oil and a pinch of salt and pepper. Spread evenly in single layer onto a fail lined baking sheet. 3. Roast in over for about 20 minutes or until Brussels sprouts are browned and softened. Pork: 1. Heat pan over medium heat. While pan is heating, pat pork chops dry with a paper towel and season each side with salt and pepper. Add 1 tablespoon of olive oil to pan. When hot, add pork. 2. Wash hands after handling raw meat. 3. Cook about 5-6 minutes on each side or until golden brown and heated to an internal temperature of 155 degrees F. Remove pork and set aside on a plate and cover with aluminum foil. Apple: 1. Cut in quarters, remove core then cut into 3/4 inch-1 inch chunks. Sauce: 1. Reduce heat to medium. Return the pan used to cook pork to the stove and add 2 teaspoons of olive oil or butter. 2. Add chopped apple and saute until slightly softened and starting to brown, about 5 minutes. 3. Heat the roasted chicken demi-glace (called deglazing the pan) and stir to combine. 4. Add honey and mustard. Simmer to thicken the sauce for 2-3 minutes on medium heat and apples are tender. Return pork chops and resting juices back to pan to re-heat, coating the pork with sauce, about 2 minutes. Serve: Plate pork chops top with sauce. Serve with roasted vegetables.
