1. Cut each skirt steak in half width-wise, season with salt and pepper. Cook in a large skillet over medium-high heat for 3 minutes on each side or until browned. Remove from skillet and set aside. 2. Reduce heat to medium. Add oil to skillet, cook the garlic and red pepper flakes 1-2 minutes. 3. Add the marinara sauce, oregano, salt, pepper and capers. Heat for 3-4 minutes. 4. Return beef to the skillet and simmer for 1 minute. Garnish with chopped parsley before serving.
