Instructions: Boil 2 cups water in a small saucepan, add 1/2 tablespoon of olive oil or vegetable oil and 1 cup of quinoa. Reduce heat to low, cover loosely. Cook for 15 minutes or until liquid is absorbed. Turn off heat and let stand for 5 minutes. Fluff with fork before serving.
