Pecorino Calabrese is specially crafted each year from January to June when the sheep's milk is at its peak flavor and yield. The milk from the flock is collected each day and delivered within hours to the local dairy to begin the cheesemaking process. Formed in woven molds, the rind takes on a beautiful, basket-like texture.
