Created by Fattoria Della Diana, a cooperative of small Italian farmers founded in 1936. Pecorino Calabrese is specially crafted each year from January to June when the sheep's milk is at its peak flavor and yield. The milk from the flock is collected each day and delivered within hours to the local dairy to begin the cheesemaking process. Formed in woven molds, the rind takes on a beautiful, basket-like texture. Produced exclusively in the small Calabria region of Italy, true Pecorino Calabrese is free from all preservatives and additives. A hard, crumbly cheese with a sweet, salty and grassy flavor.
