1. Heat the oil in a 12-inch skillet over medium-high heat. Add the chicken and cook until browned on both sides. Remove the chicken from the skillet. 2. Add the curry powder to the skillet and cook and stir for 1 minute. Stir in the soup and milk, then return the chicken to the skillet. Tip: When returning the chicken to the skillet, be sure to also add any accumulated juices from the chicken for enhanced flavor. 3. Add the tomatoes and sweet potatoes and heat to a boil. Reduce the heat to low, then cover and cook for 25 minutes or until the sweet potatoes are tender. 4. Add the spinach to the skillet. Cover and cook for 5 minutes or until the chicken is cooked through and the spinach is wilted. Tip: The volume of spinach may look like a lot, but it wilts quickly into the sauce. If necessary, add the spinach in two batches if it feels like too much to stir in at once.
