Directions

1. Heat bacon in a large skillet over medium heat for 5 minutes or until the fat has released and the bacon begins to brown. Stir in carrots, celery and onion and continue cooking for 5-6 minutes or until the vegetables begin to soften. 2. Add the meat then brown well for approximately 8 minutes. Add the tomato paste and cook for 1 minute, then deglaze with wine. 3. Increase heat to medium-high, add the water and bring to a simmer then reduce heat to medium and simmer for 15 minutes or until sauce thickens. 4. Meanwhile, bring a large pot of water to a boil and cook the pasta according to the directions. Drain the pasta and toss with the sauce. Remove from the flame and fold in the cheese and butter then serve!
