Directions

Pancakes: 1 egg. 1 tbsp vegetable oil. 3/4 cup cold water, club soda or milk. 1 cup Kinnikinnick pancake and waffle mix. Preheat electric griddle or stovetop frying pan to 350 degrees F (medium heat). Coat lightly with cooking spray or butter. In a bowl combine egg, vegetable oil and water. Whisk for 2 minutes. Slowly add Kinnikinnick pancake and waffle mix. Whisk until combined. Drop batter onto pre heated cooking surface. Flip pancakes when edges begin to curl and top bubbles. Variation: add blueberries or chocolate chips to the batter before cooking. Yield: 8-10 pancakes. Waffles: 1 egg. 3 tbsp vegetable oil. 1 cup water. 2 cups Kinnikinnick pancake and waffle mix. Preheat waffle iron to 350 degrees F. Coat lightly with cooking spray. In a bowl combine egg, vegetable oil and water. Whisk for 2 minutes. Slowly add Kinnikinnick pancake and waffle mix. Whisk until combined. Drop batter onto pre heated waffle maker. Follow waffle iron directions for bake cycle. Yield: 4-5 waffles.
