Directions
1. Heat oil in large skillet over medium-high heat. Add chicken; sprinkle with salt. Cook chicken 3 to 5 minutes or until lightly browned and no longer pink. Add garlic; cook 1 minute more. 2. Add chicken broth, undrained tomatoes and quinoa; stir to combine. Bring to a boil. Cover, reduce heat and simmer 20 to 25 minutes or until quinoa is tender and liquid is absorbed. Tip: Rinse quinoa with water before cooking to remove the natural earthy flavored coating. 3. Add celery and carrot; cover and cook 2 to 3 minutes more, stirring occasionally. Add green onion and cayenne pepper sauce; stir to combine. 4. Top each serving with blue cheese or ranch dressing. Tip: For more buffalo flavor, drizzle with additional cayenne pepper sauce before serving.
