To prepare: For thicker pancakes add more mix. 4-inch pancakes: 6-7 - Mix: 1 cup - Cold water: 2/3 cup. 4-inch pancakes: 12-14 - Mix: 2 cups - Cold water: 1 1/3 cups. 4-inch pancakes: 18-21 - Mix: 3 cups - Cold water: 2 cups. 1. Heat pancake griddle to 375 degrees F (medium heat). Lightly grease griddle. 2. Stir pancake mix and water together with a wire whisk. Batter will be slightly lumpy. (Do not overmix.) let batter stand 2 minutes. Pour slightly less than 1/4 cup batter per pancake onto griddle. 3. Cook pancakes 1 - 1 1/4 minutes per side, or until golden brown, turning only once. High altitude: no adjustment necessary. Seize the what if™... Easy waffles. 2 cups Krusteaz buttermilk pancake mix. 1 egg. 1 1/2 cups cold water. 2 tablespoons vegetable oil. Blend all ingredients together. Batter will be slightly lumpy. Pour batter onto lightly greased and preheated waffle iron. Cook waffles until steaming stops or until golden brown. Serve with your favorite fruit and whipped cream, if desired.
