Our Recipe for Super Grain Pancakes: You'll Need: Yield: 6 Pancakes (Eggs-1, Oil-2 tablespoons, Milk-3/4 cup, Mix-1 cup); Yield: 12 Pancakes (Eggs-2, Oil-4 tablespoons, Milk-1-1/2 cup, Mix-2 cup); Yield: 18 Pancakes (Eggs-2, Oil-6 tablespoons, Milk-2-1/4 cup, Mix-3 cup); Yield: 24 Pancakes (Eggs-3, Oil-1/2 cup, Milk-2-1/2 cup, Mix-entire mix). (1) Whisk together eggs, oil, and milk. Stir in mix; a few lumps are okay. Do not beat or overmix. Let stand for 5 minutes to thicken. (2) Heat griddle or skillet over medium heat, about 350 degree F. Lightly grease. (3) Pour batter 1/4 cup at a time on griddle. Flip when pancakes bubble and bottoms are golden brown; cook until the second side is browned, 1 to 2 minutes. Baker’s Tip: If your first few pancakes are thicker than you like, you can thin the batter by adding additional milk.
