Corn Meal Muffins and Corn Sticks: 2 eggs. 2-1/4 Cups corn meal. 2 Cups buttermilk. 3 Tablespoons malted shortening. 3 Teaspoons baking powder. 2 Teaspoons salt. 1 Teaspoon soda. Beat eggs together, add milk, shortening, salt. Add meal and mix until smooth. Add soda, dissolved in one tablespoon cold water. Sift in baking powder, mix thoroughly and pour into hot, well greased muffin pans. Bake in hot oven (450 degrees) 15 or 20 minutes. Hush Puppies: 2 Cups corn meal. 1 Tablespoon flour. 1/2 Teaspoon soda. 1 Teaspoon baking powder. 1 Teaspoon salt. 1 Whole egg. 3 Tablespoons chopped onion. 1 Cup buttermilk. Mix all dry ingredients together. Add onion, then milk and last the beaten egg. Drop by the spoon full into the pan or kettle in which fish is being fried. Fry to a golden brown. If a deep pot is used the hush puppy bread will float when done. To preserve freshness longer-keep refrigerated.
