Directions

Recipe for 4 people: 400g of Bartolini farmer's soup, 100g of peeled tomatoes, extra virgin olive oil, l garlic clove, 1 onion, 1 stick of celery, 1 carrot, salt and pepper to taste. Directions: Soak the soup preparation in cold water for about 12 hours. Drain and cook in abundant salted water for about 35 minutes. Meanwhile, peel and finely chop the garlic, onion, celery and carrot and sauté in extra virgin olive oil. Drain and add the boiled soup preparation, add salt and pepper to taste. Leave to season for a few minutes, then add the tomatoes passed through a sieve or crushed and enough water so the soup becomes fairly liquid. Continue cooking for about 20 minutes. Finally, add a drop of extra virgin olive oil and serve very hot with a crouton bread slice and o sprinkle of cheese to taste.
