Prep Time: 10 min. | Cook Time: 25 min. Step 1: Cook and drain the noodles according to the package directions. While the noodles are cooking, season the beef as desired. Heat 2 tablespoons butter in a 12-inch skillet over high heat. Add the beef in batches (overcrowding the pan will keep the beef from browning well) and cook for 2 minutes on each side or until browned . Remove the beef from the skillet. Step 2: Reduce the heat to medium-high. Heat the remaining 2 tablespoons butter in the skillet. Add the shallots and cook for 2 minutes, stirring occasionally. Add the mushrooms and cook for 10 minutes or until most of the liquid is evaporated, stirring occasionally. Step 3: Add the brandy and heat to a boil, stirring to scrape up the browned bits from the bottom of the pan. Stir in the flour. Add the broth and cook and stir until the mixture boils and thickens. Step 4: Stir in the paprika, mustard and sour cream. Return the beef to the skillet and cook for 2 minutes or until the beef is medium- rare or to desired doneness. Season to taste. Stir in the parsley. Serve the beef mixture over the noodles."
