Flapjack and Waffle Instructions: Flapjacks: 1 cup Kodiak Mix; 3/4 cup water*. Stir until the batter is combined (do not overbeat). Pour 1/4 cup of batter onto a heated and greased pan or griddle. Cook on medium-high heat, or 375 degrees F, until bubbles form on the top. Flip and continue to cook until golden brown. Waffles: 1 cup Kodiak Mix; 3/4 cup water*; 1 tbsp oil. Prepare just like the flapjacks and add 1 tbsp of oil. Pour the batter into a heated and greased waffle iron and cook according to your waffle iron's cooking instructions. * For thicker flapjacks or waffles, simply add more mix or use less water. Power-Up with three hearty protein options. 13 g just add water. 16 g Replace water with mix. 19 g Replace water with milk & add an egg. Raspberry Lemon Muffins: 2 cups Kodiak mix; 2 eggs; 1/2 cup sugar; 1 cup sour cream; 1/2 cup oil. Preheat oven to 375 degrees F. Add Kodiak mix to a large mixing bowl; set aside. In a separate bowl, whisk the eggs and sugar together. Add sour cream and oil to the egg mixture and whisk until smooth. Make a well in the center of the dry mix, add the wet ingredients, and fold the batter until combined. Fill greased muffin cups 3/4 full. Bake for 14-16 minutes or until an inserted toothpick comes out clean. Makes 12 muffins. Lemon Bars; Crust: 1 cup butter, softened; 1/2 cup powdered sugar; 2 cup Kodiak mix; 4 eggs; 1-1/4 cups sugar; 1/2 cup lemon juice; 2 tbsp lemon zest; 2 tbsp Kodiak mix. Preheat oven to 350 degrees F and line a 9 inches x 9 inches pan, including the sides, with parchment paper. To make the crust, use an electric mixer to cream the butter and powdered sugar. Add Kodiak mix and continue to beat until large crumbles form. Press the crust into the bottom of the prepared pan and bake for 15-20 minutes or until golden. While the crust is baking, combine the eggs, sugar, lemon juice, lemon zest, and Kodiak mix; whisk to combine. Add the filling to the hot crust and continue baking for 20-25 minutes or until the filling is set and no liquid remains. Cover the pan with foil halfway through baking to prevent the top from browning. Let cool completely, then dust with powdered sugar. Makes 9 lemon bars. For high-altitude baking (+3,000ft), increase oven temperature by 25 degrees F. For optimal freshness, store in a cool, dry place.
