Directions: Full Batch: Mix - 5 lb (Full bag) water (60 degrees F) - 44 oz (5-1/2 cups) 1. Preheat oven to 450 degrees F (390 degrees F Convection Oven). Pour 6-1/4 cups cold milk or 6-1/2 cups buttermilk and 5 LB of Biscuit Mix in a 10 qt mixing bowl. (Preferred Option: Use 5 -1/2 cups cold water). 2. Mix with a paddle on low speed for 25-30 seconds. (For hand mixing, use a bowl scraper or stiff spoon and mix until all dry mix is completely incorporated. Dough should be sticky to touch). Small Batch: Mix - 2-1/2 (1/2 bag). Water (60 degrees F) - 22 oz (2-3/4 cups). 3. Turn dough out onto floured surface and knead lightly. Roll out to 1/2 in. Thickness. Flour rolling pin and roll from the middle outward, using light pressure. For uniform thickness, 1/2 in. Rolling pin guides may be used. 4. Cut with a floured biscuit cutter. Do not twist cutter. Do not use a glass or blunt edged cutter. Place on a lightly greased baking pan with biscuit edges touching. Bake in preheated oven for 16-20 minutes, 9-10 minutes in a Convection Oven. Brush biscuits with melted butter after removing from oven. High Altitude: For locations above 4,000 feet, increase the amount of cold milk used to 7 cups, or buttermilk to 7-1/2 cups, or cold water to 6 cups for 5lb of Biscuit Mix. Continue with step 2 and bake as directed. Bake Biscuit size: 3 inch; Standard oven: 450 degrees F 16-20 minutes. Convection oven: 390 degrees F 9-10 minutes. Yield: 61, 3 inch. Biscuits. Caution: Biscuit mix is not ready-to-eat and must be thoroughly cooked before eating. Store in a cool, dry place.
