Directions: Full batch: Mix - 5 lb (full bag). Water - (60 degrees F) 44 oz (5-1/2 cups). Small Batch: Mix - 1 lb (3-1/3 cups). Water - (60 degrees F) 8.5 oz (1 cup). 1. Place total amount of water in mixer bowl; add total amount of mix. 2. Using a paddle, mix on low speed 30 seconds.: 3. Turn dough out onto lightly floured board. Dust rolling pin with flour and roll out dough. Fold in half lengthwise; turn one quarter turn; roll to 1/2 - inch thickness. 4. Cut with biscuit cutter. Place on lightly greased baking sheet with edges touching. High Altitude (Over 5,000 feet): For full batch, add 2-1/2 oz (1/3 cup) water and 1-1/2 oz (1/3 cup) all-purpose flour to mix. Prepare as directed. Bake: Biscuit Size: 2 - inches or 3 - inches. Standard Oven: 450 degrees F 12-14 minutes. Convection Oven: 400 degrees F 7-9 minutes. Yield: 5 lb mix makes 103 2-inch (1 oz or 28 g) biscuits or 47, 3 inch (2-1/2 oz or 70 g) biscuits. Nutrition facts based on 55 g biscuit. Caution: Biscuit mix is not ready - to - eat and must be thoroughly cooked before eating. Store in a cool, dry place.
