Fluffy Pancakes (Makes 6 to 8 pancakes): Ingredients: 1-1/4 cups mix. 1 egg. 1 cup milk. 2 tbsp oil. Directions: 1. Heat large nonstick skillet or electric griddle over medium heat (about 300 degrees F). 2. Stir together pancake mix, egg, milk, and oil in large bowl until large lumps disappear. For thicker pancakes, add less milk. 3. Pour about 1/4 cup batter per pancake onto skillet or griddle. 4. Cook 1 to 2 minutes per side, turning once when tops bubble and bottoms are lightly browned. Do not eat raw batter.
