Directions: (for best performance - in recipes producing a thin batter, make the batter thicker by cutting back liquids 25-50%. Baking may take longer than with real eggs.) for 1 egg combine 1 tsp mix with 1/2 tsp of sugar and then vigorously whisk with 1/4 cup cold water. The sugar helps prevent clumping. Let sit 15 min while prepping your other ingredients. Basic cookie dough ingredients: 2 tsp vegg baking mix combined with 1 tsp sugar and whisked with 1/2 cup cold water (let sit while gathering other ingredients), 3/4 cup margarine (room temperature), 2- /4 cups flour (gluten-free should work fine), 1/4 tsp kosher salt, 1 tsp baking soda, 3/4 cup white sugar, 3/4 cup packed brown sugar, 1 tsp your favorite flavoring extract. Instructions: step 1-preheat oven to 350°f. Line baking trays with parchment paper. Step 2-combine flour, baking soda and kosher salt. Step 3-cream sugar/brown sugar with margarine until well combined (1-2 min). Step 4-add veggs and extract sugar mixture. Beat (1 min). Add flour mixture and beat (about 1-2 min). Step 5- form into ping pong ball sized balls by rolling between palms of hands and space about 2 inches apart. Step 6-bake 12-15 min on middle shelf of oven. When done, place baking sheet on wire rack and let cookies cool 2 min. (makes about 36 cookies)
