You Will Need: 1/3 cup water; 2/3 cup vegetable oil; 2 eggs; For extra rich filling add 4 oz cream cheese. 1. Heat: Heat oven to 400 degrees F. Line muffin pan with paper baking cups or lightly grease. 2. Stir stir together water, oil, eggs and muffin mix until blended. Batter will be slightly lumpy. Spoon 1-1/2 tablespoons muffin batter into each cup*. Spoon 1 teaspoon filling (enclosed) into each muffin cup. Spoon 1-1/2 tablespoons muffin batter on top of filling, making sure filling is enclosed by batter. 3. Bake: Bake 16-19 minutes or until tops are golden brown and firm to the touch. Cool 5 minutes: gently loosen and remove from pan. Store cooled muffins in tightly covered container. Do not eat raw batter. * For extra rich filling, combine 4 ounces softened cream cheese and contents of filling packet in a bowl; stir until smooth. Spoon 1 tablespoon filling mixture into each cup.
