Directions

1 lb. Camellia Large Lima Beans, 1/2 lb. ham or seasoning meat, 1 large onion, chopped, 1 tbsp. parsley, chopped, 1 tbsp. celery, chopped, 1 clove of garlic, chopped, 6 cups water, 1 large bay leaf, salt and pepper to taste Cajun seasoning to taste Rinse and sort beans. In a large pot, add beans and water. Bring to a boil for 10 minutes. In a separate skillet, cook meat until browned. Add the chopped onion, parsley, celery and garlic. Saute until vegetables are tender. Add meat, vegetables and bay leaf to the pot of beans and water. Add salt, pepper and Cajun seasoning to taste. Reduce heat, cover and simmer, stirring occasionally, for about 11/2 hours, or until tender. Add water while cooking, if necessary. Serves 6-8.
