Directions

Dried beans and peas are naturally grown, raw agricultural products. Although they have been mechanically cleaned before packaging, some foreign material may be present. Wash and carefully sort before cooking. 1 Ib. Camellia Pink Beans. 8-10 cups water. 1/2 Ib. salt pork or ham hock. 1 medium onion, chopped. 2-1/2 tbsp. chili powder. 1 tbsp. sugar. 1 tbsp. dry mustard. 2 tbsp. molasses. Salt and pepper to taste. Rinse and sort beans. In a large pot, add beans, water and salt pork or ham hock. Bring to a boil for 10 minutes, then reduce heat, cover and simmer for 1 hour. Add seasonings and simmer until tender, adding water and stirring as needed. Add salt and pepper to taste. Serves 6-8.
