A Treasure of Our Valley: The Bouchard Family invites you to discover Ployes, a staple of traditional Acadian cuisine. Harvested for generations from our fields in Northern Maine, the nutrient-rich buckwheat grain stars as the main ingredient in this unique flour mix. Health giving buckwheat compares favorably with meat, eggs, and milk as a source of protein however, Ployes are free of fat and cholesterol. Our recipe closely follows that of our French Acadian ancestors, created in the late 1700's after their arrival to the St. John River Valley. Today, you can share light and wholesome Ployes with your family and see why they're building an identity all their own. Ployes are as elegant as a fine crepe, as hearty as a breakfast pancake and as versatile as any bread. It is with much pride that we offer you a taste rich in culture and heritage. Bon appetit!
