Makes: 1 regular loaf pan or approximately 12 muffins. You Will Need: 4 small ripe bananas, 4 tbsp. of melted butter or oil, 2 eggs (or egg substitute), 2 tsp. vanilla. Directions: Pre-heat oven to 350 degrees F and grease pan. 1. Mash the 4 small ripe bananas in a bowl. 2. In the bowl add 4 tbsp. of melted butter or oil, 2 eggs (or egg substitute), 2 tsp. of vanilla, and Mama Stoen's Banana Bread Mix. Mix together for about 1-2 min. 3. Pour the banana dough into a well-greased loaf pan or into 1 muffin pan (makes approx. 12 muffins). 4. The loaf pan will take around 45-55 minutes and the muffin pan will take around 18-25 minutes. They are done when inserted toothpick comes out clean. Baking times may vary.
