Directions

Ingredients: 1lb. black beans, 6 cups of water, 2 onions peeled and chopped, 4 cloves of garlic chopped, 6 tablespoons of olive oil (canola, corn or soy), 2 teaspoons of salt, or salt to taste. Lola's vegetarian black beans: wash beans and place in 4 quart pan with water at high heat. When water boils, lower heat to medium. Cook for one hour or until tender. If necessary, add (hot) water. In a separate pan over medium high heat combine the oil, onion, garlic, black pepper. Stir often until onion is slightly browned, about 10 minutes. Add to beans and raise heat. When liquid boils lower heat and cook for 10 minutes. Add salt to taste.
