Blackeye peas are a natural agricultural product. Despite the use of modern processing equipment, it is not always possible to remove all foreign material. Before cooking, sort blackeye peas to remove small stones or soil. Rinse under running water. Sort and rinse blackeye peas; place in large pot. Soak: Add 3 cups water for each 1 cup (1/2 lb) blackeye peas. Soak as desired, below; rinse and drain before cooking. Quick: Heat to boiling; boil 2 minutes. Remove from heat; cover and let stand 1 hour. Overnight: cover; let stand 6-8 hours or overnight. Cook: In large pot, add 3 to 4 cups water for each 1/2 lb soaked blackeye peas. Heat to boiling. Reduce heat, cover and simmer 1 1/2 to 2 hours or until desired tenderness.
