Directions

Pumpkin Pie (makes 2 pies - 16 servings total). 2 unbaked 9 inch pie crusts. 1 can (29 oz) 100% pure pumpkin. 1 cup sugar. 2 tsp. ground cinnamon. 1 tsp. ground ginger. 1/2 tsp. nutmeg. 4 eggs, beaten slightly. 1 1/2 cup half and half, light cream or milk*. Preheat oven to 375 degrees F. Place 2 pie crusts in 2, 9-inch pie plates, set aside. In a bowl, combine 100% pure pumpkin, sugar, cinnamon, ginger and nutmeg. Add eggs; beat lightly with a fork until combined. Gradually add half and half; stir until just combined. Pour filling evenly into 2 pie crusts. To prevent over browning, cover edges of the pie crusts with foil. Place in oven. Bake for 25 minutes. Remove foil. Bake about 25 minutes more or until a knife inserted in the center comes out clean. Cool on a wire rack. Cover and chill within 2 hours. *Fat-free half-and-half or fat-free evaporated milk may be used. Do not use sweetened condensed milk.
