Directions

You will need: 1/3 cup milk; 1/4 cup oil; 1 egg. 1. Heat oven to 400 degrees F. Grease with shortening or spray with non-stick cooking spray one 8-inch ovenproof skillet or square pan. If using cast iron, place greased skillet in oven for 7 to 8 minutes or until hot. 2. Combine cornbread mix, milk, egg, and oil in small mixing bowl; stir until smooth. Pour into square pan or preheated cast iron skillet. 3. Bake at 400 degrees F for 10 to 12 minutes* or until golden brown. *Directions developed using conventional ovens. Ovens vary; baking time may need to be adjusted. Double recipe: Grease with shortening or spray with non-stick cooking spray one 10 % - inch ovenproof skillet or 9-inch square pan. If using cast iron, place greased skillet in oven for 7 to 8 minutes or until hot. Prepare cornbread mix as directed above in basic recipe using 2 packages of mix, 2/3 cup milk, 1/2 cup oil and 2 eggs. Bake at 400 degrees F for 17 to 22 minutes* or until golden brown. *Directions developed using conventional ovens. Ovens vary; baking time may need to be adjusted. Muffins and cornsticks: Lightly spray 6 to 8 muffin cups or cornstick pan with non-stick cooking spray. Place in oven for 7 to 8 minutes or until hot. Prepare batter as directed above in basic recipe. Fill muffin cups or cornstick pan 2/3 full. Macaroni with Elote cornbread crust: macaroni: 1 lb of macaroni, 8 oz shredded sharp cheddar- reserve a handful for topping, 16 oz shredded queso or Mexican blend - reserve a handful for topping. Topping:1 package Martha white Mexican style street corn cornbread mix, 3 tablespoon butter, melted 1 egg, 1/4 cup of milk. Heat oven to 350 degrees F. Prepare macaroni according to package instructions. Drain and add shredded cheeses and melt, reserving a handful of each for the topping. Spread macaroni & cheese evenly into a greased 9 inch x 13 inch pan. Mix together cornbread mix, egg, melted butter & milk. Spread cornbread batter over the macaroni & cheese. Top with the remaining shredded cheese. Bake 18 minutes* or until golden brown. *directions developed using conventional ovens. Ovens vary; baking time may need to be adjusted.
