Directions

Preparation Instructions: Soaking Instructions: For every 1 cup of mixed beans, add 3 cups of water. Cold Water Soak: Combine mixed beans and water and let stand 12 hours in the refrigerator. Hot Water Soak: Combine mixed beans and water and boil for 5 minutes. Remove from heat, cover, and let stand 1 hour. Discard the soaking water, rinse with cold water and cook according to recipe. Cooking Instructions: Yield: 1 cup of dried mixed beans=2 cups of cooked mixed beans. Bring 1 cup of mixed beans and 3 cups of water to a boil. Reduce heat and simmer for 60-120 minutes until tender. Add 1 tsp of vegetable oil to the cooking water to reduce foaming. Appliances vary in power, these instructions are guidelines only. Sort and wash before use. Keep in a cool and dry place.
