Preparing Chicken for Frying: Store chicken on the bottom of cooler to prevent dripping on other foods, and away from the door where the temperature is warmer. Moisten chicken before coating. Traditional application: Tumble pieces in Kentucky Kernel Seasoned Flour. Extra Crispy application: Dip coated pieces in water again ensuring all flour has been moistened. Tumble again in Kentucky Kernel Seasoned Flour before frying. For a heavier coating: Dip chicken pieces into buttermilk or an egg/milk mixture, then tumble again in Kentucky Kernel Seasoned Flour before frying. Let coated pieces rest on trays at room temperature for 2-3 minutes for a crispier coating and less fall-off in the fryer. Coated chicken can be held under refrigeration for up to 12 hours before frying. Frying Tips: Open Fried: Place chicken into 340 degrees F - 350 degrees F oil and fry until golden brown - usually 12-15 minutes. Pressure Fried: Place chicken into 325 degrees F oil and fry until golden brown - usually 7-9 minutes. Remove chicken carefully from frying oil. Tumbling tears the coating and causes moisture loss. Heat lamps and holding cabinets are best for holding cooked chicken. Avoid frying fish and chicken in the same oil. Cook chicken in clean oil and filter daily. Sift flour to remove lumps.
